The ex-chef to Queen Elizabeth II shared the recipe for the monarch’s favorite chocolate mousse.
According to the royal family’s personal chef in the 1990s, Darren McGrady, the queen loves dark chocolate.
“It’s no secret that the queen loves chocolate, and the darker chocolate the better,” he revealed.
In addition, he has a predilection for a chocolate mousse, made with whiskey and coffee.

Drambuie, a golden-colored liqueur made with Scotch whisky, heather honey, herbs and spices, is used for the monarch’s favorite dessert.
“I use Drambuie because I love the flavors it contains, the magnificent herbs and spices, and also the honey. All of this combination comes together to make an incredible chocolate mousse,” explained the chef.
McGrady, who served the royal family for 15 years, used to make this chocolate mousse when the family was at Balmoral Castle in Scotland.
The queen’s favorite chocolate mousse only consists of seven ingredients, including whiskey, the chef revealed.
- 170 grams of dark chocolate
- 295 milliliters of cream
- 5 egg yolks
- 5 egg whites
- 1 teaspoon of instant coffee
- 2 tablespoons of Drambuie
- 1 tablespoon of boiling water
Add dissolved coffee, beaten egg yolks, and whiskey to melted chocolate and mix well, explained the chef.
Then you have to whip the cream until peaks form and also whip the whites to keep them.
In the next step, it is necessary to add the cream to the chocolate mixture and then the whites.
